COOKING INSTRUCTIONS

  • 1 ½ lb (680g) pork bones (with a little meat still on)
  • (Vegetarian alternative) 4-5 dried shiitake mushrooms soaked in hot water for 5-10 mins
  • 6-8 cups water
  • 1-2 carrots (optional)
  • 10g goji berries (optional)
  • 2-3 dried figs or honey dates for sweetness (optional)
  • 1 large scallop for umami (optional)
  • 1-2 pieces of snow fungus for more Lung Yin nourishment (optional)

(Alternatively, cook only the herbs without adding pork bones or shitake mushrooms to prepare as a refreshing tea! A little bit of rock sugar can be added for additional sweetness.)

  1. Soak the pork bones in cold water for 1 hour. Rinse thoroughly and drain. This helps rid the bones of any impurities or blood to keep the soup clear.
  2. Parboil the bones for about 5 minutes and discard the water. Rinse the pot and bones once again to clean off any lingering impurities.
  3. Add the bones/mushrooms and entire herb packet into 6-8 cups of water and bring to a boil. Lower the heat and simmer for 3-4 hours. You may need to occasionally skim off any scum, but parboiling and soaking the bones should prevent this.
  4. Add goji berries at the end if using and cook for an additional 5 minutes.
  5. Season with salt to taste, and enjoy hot or warm!
